Each authentic tuscan family needs to mantain a unique recipe for the famous chicken liver traditional patè sauce.
This delicious Crostini Sauce is usually served as an appetizer on toasted bread slices, the Crostini, as a red wine excellent pairing. Some versions just contain chicken liver, others require beef spleen or meat, anchovies or even apples.
Since every area in the region claims its recipe to be the “real” one, we just had to pick one! We focused then on one of the most delicate and sweet tasting, originally sourced from the Arezzo area; it is made with both chicken meat and liver, pickled gherkins, capers and sweet wine. Enjoy your meal!
